Scape Pesto
Garlic scape pesto is a versatile and delicious way to use up those curly green shoots. I will also add basil to my mix, if I have it fresh in the garden. You can also substitute sunflower seeds if you do not have pine nuts. Here's a recipe for you to try:
Ingredients:
1 cup garlic scapes, chopped into 1-inch pieces
1/2 cup grated Parmesan cheese
1/2 cup toasted pine nuts
1/2 cup olive oil
1/2 tsp salt
Juice of 1/2 lemon
Instructions:
In a food processor, pulse the garlic scapes until they are finely chopped.
Add the Parmesan cheese and pine nuts and pulse again until they are well combined.
With the food processor running, slowly pour in the olive oil until the mixture is smooth and creamy.
Add the salt and lemon juice and pulse once more to combine.
Taste the pesto and adjust the seasoning as needed.

Toss the pesto with pasta, either hot or cold, for a flavorful and easy meal.
Use the pesto next time you make Lasagna, and mix it into the ricotta cheese layer. This makes for an absolutely excellent Lasagna.
Use the pesto as a spread on sandwiches or wraps.
Makes an excellent base for pizza, or flatbread recipes.
Spread the pesto on crostini or crackers for a simple appetizer. Makes an excellent garlic bread.
Mix the pesto into scrambled eggs or an omelet for a savory breakfast.
Use the pesto as a dip for vegetables, such as carrot sticks or cucumber slices.
This pesto freezes well for longer term storage.
